5 Step Vegan Matcha Rolls with Salted Caramel Sauce (No Rise & Refined Sugar-Free)

These Matcha Rolls are super quick and a play on cinnamon rolls. They are deliciously rich and taste amazing! It gives off an amazing colour and is refined sugar free! The vegan caramel sauce is an absolute winner! Perfect to take as a plate.

Since these rolls use baking powder instead of yeast this means the dough is denser but they are very comforting and remind me of a lighter scone/cake consistency. 

^these are a cinnamon+matcha mix inside - just add a few tsps of cinnamon to the recipe below to make these instead - which mask the matcha flavour but keep your dough a nice green hue

Prep and Baking time : 45 minutes

What you'll need to make 12 small Matcha rolls/ one mini matcha-cake:

Ingredients

  • 2 cups of Plain Flour
  • 1 Tbsp Thea Matcha
  • 3 1/2 Tbsp baking powder
  • 1 tsp Rock Salt
  • 3 Tbsp Erythritol Stevia mix (from my local Binn Inn)
  • 1/4 cup room temp Vegan Butter
  • 3/4 cup soy milk

Matcha Sugar Filling

  • 2 1/2 tsp Thea Matcha
  • 1/3 cup Erythritol Stevia mix (from my local Binn Inn) 

 Vegan Salted Caramel Sauce Recipe by Pinch of Yum - I added way more salt to it cause I'm about that life.

Gadgets

  • One bowl and some spoons
  • Measuring Utensils

Method

Preheat your oven to 185 C

Step 1: Place all the dry ingredients into a bowl and mix to combine 

 

 Step 2: Add the milk of choice slowly and trying to make sure your dough doesn't get too wet as this will make it difficult to roll out. If you don't need it all don't use it! It won't need to come together completely until you take it out of the bowl and press it together.

Step 3: Shape your dough into a rectangle  and roll out your dough onto a nicely floured surface and spread your room temperature butter (melted would work too) along it ready for your sugar filling. Leave about 2cm at the top so we can use it so when we roll it the shape will stay !

P.S. Make sure you flip the dough around/ that the dough won't stick to your work surface. You can flip it over a few times with some flour - but don't use too much to prevent a tougher texture of your Matcha rolls. 

Step 4:  Prepare your sugar filling and evenly spread it over your buttered surface. Roll it up ( longer side up) and try to keep it as even as possible!

Cut them up into even pieces - I made about 11 sort of even rolls but it doesn't matter anyways lol. You could easily have made 12

 

Step 5: Place into a pan of choice - you can put these into muffin trays or bake together it's really up to you.

Bake at 185 C for 15-18 minutes or until golden brown - you don't want to over bake these as it will go tough and you really want to enjoy these while they're a bit more on the gooey/softer side. 

 Step 6: Make your Vegan Caramel sauce while you are waiting for these and try not to eat it all before you pour it over.

 

Serve it up!

As you can see from the inside the baking powder definitely does the trick, although not the same but still so good if you need that 'Cinnamon/Matcha Roll' cravings. Only 5 steps and you're there! ( I never wait for my baking to cool.. so I always say just go for it and this is definitely a recipe that you can just start eating straight away, no waiting needed! )

 

 

Thea Tips:

  • There isn't actually a proper way to define 'Refined Sugar Free' (in NZ anyways) for that purpose we mean it to be Cane White Sugar free - would recommend to use only erythritol which is a sugar alcohol derived from fruit.
  • If you are conscious of fructose then please note that coconut sugar is therefore not that much better than regular white sugar. Coconut sugar is more natural and 'better' than white sugar but still not good for you! Read this.
  • I found the dough to be quite wet so reduced the milk to 3/4 cup, feel free to add a bit more based on how your dough turns out
